3 Sweet potatoes (wash with skin on & steam).
1c Whole Corn (drain).
1c Feta (crumbed).
½ Red Pepper (chopped).
Parsley chop to garnish

- Cut sweet potatoes in half (remove little inside).
- Spoon in corn, add feta and peppers and garnish.
